Named to honour the well-known French bicycle race, from Paris to Brest. Choux pastry (profiteroles) coated with a praline puree in the centre and filled with a Mousseline cream (crème patissière and butter) flavoured with praline. Sprinkled on top with praline and decorated with icing sugar and whole hazelnuts.
Crunchy and unctuous.
